Step 1
Press your tofu 15-30 minutes. Chop into cubes, place in a container and pour some marinade on it (not too much, it'll soak up the liquid) then gently stir or toss to distribute. Also do whatever prep your noodles require
2. Either in a separate pan or prior to frying your veg, add a few Tbsp of oil amd sesame oil to a pan and fry your tofu on med high heat on at least 2 sides until crispy. I find that chopsticks are the best tool to flip them without breaking but you have to do it one at a time. Remove and drain oil
3. Add your veg to a hot oiled pan (except garlic, which will be added with the sauce). Fry for a few minutes until tender to your liking 4. Throw in your noodles and fry those too. Once you like the level of crispiness, add the tofu back in. Pour your sauce over the noodles and mix everything up. Fry for another minute or two before removing from the heat
5. Top with chopped green onion and serve 🤠
