Ingredients
6 servings

1 Tbspolive oil

1onion
small, diced

3cloves garlic
minced

1red bell pepper
medium, diced

1jalapeno
diced, optional

2carrots
peeled and diced

1 poundlean ground turkey
I use 93/7

3 Tbspchili powder

1 Tbspcumin

1 tsporegano

4 cupslow sodium chicken broth

1russet potato
medium, diced

28 ozcan crushed tomatoes

1Can Dark Red Kidney Beans
drained and rinsed

1can sweet corn
drained and rinsed

1 cupspinach
torn into 1 inch pieces, or dark greens of choice
Instructions
Step 1
Saute onion and garlic in olive oil until translucent.
Step 2
Add all other veggies (except potato) and saute for another 5 minutes.
Step 3
Add ground turkey and spices, cook until turkey is done.
Step 4
Add all other ingredients except the spinach. Bring to a boil, then reduce and simmer uncovered for about 15-20 minutes or until the potatoes and carrots are done.
Step 5
Add spinach and cook for another few minutes.
Step 6
Serve!
