Ingredients
4 servings
6skinless chicken thighs
¼ cupflour
¼ cuppeanut oil
4spring onions
chopped
3 tablespoonsgarlic infused olive oil
3 teaspoonsfresh ginger
grated
1long red chilli
seeds removed, thinly sliced
1 stemlemongrass
finely chopped
1 teaspoonground turmeric
2 teaspoonground cumin
2 teaspoonground coriander
1 teaspoonsalt
600gsweet potato
peeled and diced
1 ⅓ cupscoconut milk
150ggreen beans
trimmed and chopped
coriander leaves
to serve
Instructions
Step 1
Dust chicken in flour. Shake of excess. Heat half the peanut oil in a large pan and cook chicken in batches until brown. Transfer to a plate
Step 2
Heat remaining oil including garlic oil, cook spring onion 1-2 minutes or until softened. Add ginger, lemongrass and spices. Cook, stirring for 1 minute
Step 3
Place sweet potato into the base of slow cooker and top with chicken, onion mixture, and coconut milk. Cook on high for 3-4 hours or low 6-8 hours
Step 4
Add beans in the last half hour of cooking
Step 5
Serve with coriander and rice
