Greek inspired feta, chicken and tomato salad

My all time favourite salad. Fresh, easy and really filling! Serve by it self, or with some bread and butter on the side.

Instructions

Step 1
Cut the tomatoes, cucumber, red onion and feta into small cubes and put in a large salad bowl.
Step 2
Make the dressing by mixing all the ingredients.
Step 3
Add the dressing, chopped mint and oregano to taste to the bowl and mix.
Step 4
Season the chicken with salt, pepper, smoked paprika and oregano and fry in oil (I prefer olive oil) until cooked.
Step 5
Once the chicken is cooked, take it out of the pan and fry the chickpeas in the remaining oil (make sure you’ve drained and dried them properly). Add a bit more oil if necessary.
Step 6
Fry the chickpeas until golden and season them with smoked paprika and salt.
Step 7
Mix everything and enjoy with freshly made bread. (Ideally sourdough!)
