Step 1
Put the beans and water in a heavy pot and bring to a boil. Turn the heat to low and simmer for 2 minutes. Turn off the heat and let the beans sit, uncovered, for 1 hour. Add the 3 slices of ginger to the beans and bring them to a boil again. Fast boil for 10 minutes, then cover, leaving the lid slightly ajar. Turn heat to low, and simmer gently for 1 hour. Discard the ginger slices.
Step 2
Take half of the beans and liquid and purée in a blender or food processor. Pour this puréed paste back into the pot of beans. Add the salt, lemon juice, garam masala, and cream. Stir to mix.
Step 3
Heat the oil in a small frying pan over medium heat. When hot, put in the cumin seeds. Two seconds later, put in the finely chopped garlic and chopped ginger. Stir and fry until the garlic browns lightley. Add the red chillies. Stir once and add this mixture to the pot of beans.
