Instructions

Step 1
1. Wash and sort pinto beans.
Step 2
2. Place beans in a pressure cooker and cover with chicken stock. Cook 45 minutes.
Step 3
3. Light grill, set up Dutch oven directly over coals.
Step 4
4. Add bacon and cook until crispy.
Step 5
5. Remove chorizo from casing and add with bacon, allowing to brown well.
Step 6
6. Add in onion and peppers. Once soft, add garlic.
Step 7
7. Add in precooked beans with juice and cover with more stock.
Step 8
8. Season to taste and allow to cook until thick and creamy.
Step 9
9. Serve with mixed grill items and enjoy.
