Ingredients

The Salad

185gcan tuna
keep it chunky

2potatoes
large, chopped into bite-sized chunks

green beans

2eggs
hard boiled into jammy consistency

8cherry tomatoes
quartered

spinach
or other green leaves like cos

0.5shallot
finely chopped

2 teaspoonscapers
small ones
The Dressing
Instructions
Step 1
Boil potatoes until tender, then set aside to cool

Step 2
Add eggs to boiling water for approx 6.5 to 7 minutes to achieve jammy consistency. Remove and cool under running water before peeling and slicing in half.

Step 3
Blanche green beans for 90 seconds in boiling water, remove and cool under running water

Step 4
Add the cool potatoes, shallot, capers, beans, Tuna, leaves, tomatoes to mixing bowl and season with salt and pepper







Step 5
Combine all dressing ingredients into a jar and shake well
Step 6
Pour over dressing and toss to coat - don’t break up the potatoes or tuna too much
Step 7
Serve with eggs halved on top
