Pork Rasher Ramen

Instructions

Step 1
Coat the pork rasher in five spice and leave to sit until you're ready to cook.
Step 2
Heat up a pot on the stove. Once hot add a small dash of olive oil and add in the pork rasher. Cook the rashers until they are cripsy, but not cooked through.
Step 3
Add a dash of sesame oil along with the garlic and ginger. Sauté for about 1 minute
Step 4
Add in the chicken stock and bring to the boil
Step 5
Add the soy sauce, mirin, sugar and salt and bring to the boil again. Add in additional soy sauce to taste

Cut half of a sheet of nori into small squares (1cmx1cm) and add it into the pot
Step 7
Leave the broth to simmer for 2.5 to 3 hours, or until the pork is tender.
Step 8
Soft boil an egg for 6 minutes.
Step 9
Add boiling water to the dried Ramen noodles about 20 minutes before serving
Step 10
Add the cooked Ramen noodles to a bowl, pouring in the broth to cover them. Add a piece of the pork rashers on top, and add a soft boiled egg.
Step 11
Garnish with nori, spring onion and black sesame seeds
