Shankleesh is one of the Lebanese mezze dishes, Normally it needs a long process of making a kind of dried cheese, the cheese is salted, shaped into balls and aged. Once matured, it is coated in dried thyme.
But in our recipe we are using the feta cheese instead of the long process of preparing shankleesh from scratch.

Step 1
In a large bowl, we add 1 tsp of salt, 1 tsp of cayenne pepper and 1 tsp of thyme, then give it a quick mix together until they well combined, and add in the cheese and mix very well.
Step 2
After this, bring an ice cream scoop and scoop use it to form the cheese like a ball shape the size of golf ball.
Step 3
In a tray with parchment paper, line up the formed shankleesh balls on the tray until we finish all the quantity.
Step 4
In a large deep plate, Put the ground thyme and dip in the shankleesh balls with the thyme and roll it over to cover completely then put them on the parchment paper again.
Step 5
Do the other balls the same way until you finish all.
Step 6
Then we put the shankleesh balls in the refrigerator and leave it for two hours until it becomes firm and ready to serve.
Step 7
At the time of serving we take it out of the refrigerator, put it on a plate, add a little olive oil to it, then serve it with hot bread.
Step 8
Or crumbled in the middle of the plate and surrounded with chopped onions, diced tomatoes and fresh herbs, with a pita bread on the side.
