Step 1
Drain and slice tofu into planks. Place on towel on baking sheet, and cover with another towel. Place another baking shot on-top, and weigh down for 10-15 min to drain.
Step 2
Trim ends of green beans and halve. Slice scallions, and peel and grate ginger. Set aside separately.

Whisk together all other ingredients.

soy sauce2 Tbsp
gochujang2 Tbsp
sherry vinegar1 Tbsp
Step 4
Heat cast iron skillet with oil until shimmering
Step 5
Tear tofu into jagged 3/4" pieces. Working in 2 batches, place in hot oil until dark and golden on underside. Flip to brown other side. Transfer to paper towel and finish second batch
Step 6
Add green beans to skillet with scallions and ginger. Season with salt. Cook tossing until browned and slightly shriveled.
Step 7
Pour in liquid mixture, simmer 1 minute. Return tofu and toss to coat
