Cream of mushroom and potato soup

Instructions

Step 1
Heat the oil in the pan and sauté the onions on high until they caramelise, stirring frequently. This takes around 8 minutes.
Step 2
Add the garlic and fry for another 2 minutes
Step 3
Add the remaining ingrediënts except for the mushrooms. Bring to a boil and cook for 5 minutes.
Step 4
Reduce the heat to medium-high and add in the mushrooms, let simmer for around 15 minutes.
Step 5
Blend the soup with a mixer, leaving in little chunks of veggies
Step 6
Serve and enjoy!
