Christmas Orzo Salad

Step 1
Make orzo according to the directionson the box. After it's drained, toss with a bit of olive

Allowed the orzo to cool then add arugula, dried cherries, pistachios, pumpkin seeds, scallions, lots of orange zest, salt and pepper and tossed with a simple orange vinaigrette

Orzo Salad with Dried Cherries, Pine Nuts and Arugula

My Holiday Vinaigrette: 1/2 cup orange juice Zest of one orange 1/2 cup balsamic vinegar 2 tbIs pure maple syrup 1 Clove garlic minced 1 tbls Dijon 1/2 tsp kosher salt 1/2 freshly cracked pepper 3/4 cup olive oil Put all ingredients in a jar and shake well to combine (I1 always double this and keep it in my fridge.. will last 2 weeks in fridge)
