This orzo and kale salad is so light so delicious and healthy. This salad is the perfect summertime salad, this is perfect for meal prep just add your favorite protein on the side and you’ll have a delicious and healthy meal.

Ingredients

1 cuporzo
cook according to the directions on the box
1 bunchkale
1 tablespoonextra virgin olive oil
1tomato
large
1cucumber
1red onion
small
1can of chickpeas
drain and rinse
½ cupextra virgin olive oil
1juice of lemon
large
4 tablespoonsbalsamic glaze
1 teaspoonsalt
½ teaspoonoregano
½ teaspoongarlic powder
½ teaspoonblack pepper
Instructions
Step 1
1-Cook the orzo according to the directions on the box after it’s cooked drain and rinse it with cold water and set it aside.
Step 2
2-take the kale leaves off of the stem wash it and chop it really fine
Step 3
3-put The chopped kale in a large bowl add 1 tablespoon of extra-virgin olive oil and massage the kale to soften and make the leaves tender
Step 4
4-then to the kale add the cooked orzo, tomatoes, cucumbers, chickpeas and the red onions.
Step 5
5-make the dressing by mixing together the extra-virgin olive oil, lemon juice, balsamic glaze, salt, oregano, garlic powder and black pepper and mix really well.
Step 6
6-pour the dressing over the salad mix it all together and enjoy a delicious orzo and kale salad.
