Step 1
Clean the pak choi, separate the leaves and cut larger pieces if needed. Blanch briefly in boiling water, then drain and set aside.
Step 2
Heat olive oil in a pan on low heat and add minced garlic, letting it release its flavor without browning.
Step 3
Add soy sauce and water, then stir in cornstarch dissolved in a little water to create a light sauce.
Step 4
Add the pak choi to the pan and toss gently until coated and heated through.
Step 5
Serve immediately with a light sprinkle of black pepper.
