Instructions
Step 1
Preheat your oven to 180°C or 350°F.
Step 2
Line a baking tray with baking paper.
Step 3
Dice the eggplant and place it on the baking tray.
Step 4
Spray or drizzle some olive oil.
Step 5
Prepare the miso marinade by mixing all of ingredients in a bowl.
Step 6
Drizzle the marinade over the eggplant.
Step 7
Place the eggplant in the oven for 20 minutes or until it's soft and lightly browned.
Step 8
Heat the rest of the olive oil in a frying pan on medium heat and add greens.
Step 9
Sauté until they're bright green.
Step 10
Divide the cooked eggplant equally into 2 bowls, adding the greens, rice and sliced avocado.
Step 11
Sprinkle with sesame seeds and chilli flakes, to serve.
