Amy's Golden Lentil Soup( CopyCat)

Well, I love Amy's soup. However, it is quite pricy and comes with so little. This recipe is my take-on Amy's Golden Lentil Soup. Thick, hearty, silky, and full of flavor, this is one of my very favorite soup recipes. You can cook with rice cooker, pot/stove top, instant pot, or slow cooker, whatever you have! I like to have this soup with a slice of crusty homemade bread and/or salad.

Instructions

Step 1
Heat a thin layer (about 2-3 tablespoons) of oil in a large saucepan over medium heat or sauté setting with a rice cooker, instant pot, etc.
Step 2
Add in diced onion and sauté for 2 minutes. Next add in garlic, ginger, and crushed seeds and cook for 2 minutes.
Step 3
Now add chopped carrots, the yellow split peas, red lentils, tomatoes, broth, Worcestershire sauce, and remaining seasonings. Return to a boil, cover and turn down to a low boil ( for a pot on the stovetop) and cook for 30-45 minutes depending on what cookery you are using. If use an instant pot or rice cooker, use soup setting to cook. Before removing from heat, test a yellow pea - it should be tender. If not cook another 5-10 minutes.
Step 4
Taste the soup to add more seasoning, salt, bouillon cube, etc.
Step 5
Remove from heat and allow to cool for 20 minutes. Puree in a blender until smooth or use an immersion blender while in the saucepan.
Step 6
Serve your soup with crusty bread or with some salad or green
