Instructions
Step 1
Finely dice the onion, carrot + celery, then mince the garlic.
Step 2
In a large saucepan, heat 2tbsp of olive oil on a medium heat. Once warmed, add the onion, carrot + celery with a large pinch of salt.
Step 3
Sautée for 5-10 minutes until softened + catching the pan, then add the garlic, frying until fragrant.
Step 4
Add the miso, harissa + mustard, cooking out for another 2-3 minutes. Then deglaze with the wine.
Step 5
Add the beans, veg stock, then season with salt + pepper & bring to the boil.
Step 6
Lower the heat + simmer for 10-15 minutes, blending a bit at the end for a creamier texture if you like.
Step 7
Finish with chopped parsley, mint, a squeeze of lemon juice + nutritional yeast for cheesiness.
Step 8
Spoon into bowls, top with more fresh herbs, olive oil, nutrtional yeast + chilli flakes - serve with crusty bread + enjoy!

![There was only one other review on here when I made this but took the reviewer Lauren's advice re saltiness and reduced the miso amount [especially as there are 2 other 'add salt' instructions ...one of which I just added freshly ground black pepper for]. Thanks Lauren!
End result is a really tasty and delicious dish. It did look a little bland tbh in the pan, so I added kale too - for some extra taste/green factor/colour.
