An easy, inexpensive, high protein vegan butter bean burger recipe. You can swap out the butter beans for any bean if you have others that need using up instead.

Instructions
Step 1
Chop the onion into small pieces.
Step 2
Saute the onion in a pan with the coconut oil.
Step 3
Finely grate the ginger.
Step 4
Add all ingredients together and blend in a food processor, or mash, until you get a squishable blend.
Step 5
Shape firmly into 8 patties.
Step 6
Place under the grill until tanned on each side. This should take about 7 minutes on each side. Take care when turning over as they can be a little fragile until fully cooked. Alternatively fry in a pan with oil, bake in the oven, or place on a barbecue until cooked.
Step 7
They serve well hot or cold and go nicely with a sauce. You can also freeze these before cooking (allow to defrost first unless baking).
