Peanut Butter Tofu

For the sauce

Step 1
Mix tofu, cornstarch salt and pepper. Spread on a baking tray, drizzle with oil and bake at 200°C for 20 to 30 minutes until crispy.
Step 2
In a pan, fry garlic for 1-2 minutes. Add soy sauce, peanut butter, maple syrup and lime juice (+ zest), and stir to combine. Add the baked tofu to the pan and stir until evenly covered.
Step 3
Serve with some crushed peanuts, rice, charred broccoli or however you like.
