Instructions

Step 1
Bring beans, head of garlic, sage and water to a boil in a soup pot. Reduce heat, cover and simmer gently, stirring occasionally until beans are tender, about 1 to 1 1/2 hours.
Step 2
Heat 2-3 tablespoons water in a large saute pan, add crushed garlic and red pepper flakes and cook until garlic is fragrant, about 30 seconds. Add spinach or other greens and cook until just wilted, about 3 minutes.
Step 3
Using a slotted spoon, transfer beans to saute pan and cook, tossing gently until beans are warmed through. Add lemon zest, lemon juice and 1/4 cup bean cooking liquid and toss, adding more cooking liquid if needed to reach desired consistency. Stir in pine nuts and season with black pepper.
Step 4
Note: Instead of soaking overnight, you can also use the "quick soak" method. Place beans in a pot and cover with about 2 inches of water. Bring to a boil, cook for one minute, then remove from heat. Cover and let soak for one hour, then drain.
