Protein Boost - Coronation Chicken

This is a great way of using up leftover cooked chicken or turkey and using chickpeas to boost the fibre and protein content. Can be served at a party and can be multiplied to serve more people. It is served cold with rice and salad or topped on a jacket potatoes, in wraps, sandwiches and even on toast.

Instructions

Step 1
Cut the chicken into bite-sized pieces or tear the meat into pieces with your hands.
Step 2
To make the sauce, measure the mango chutney, curry powder, mayonnaise and yoghurt and put into a large mixing bowl. Mix well.
Step 3
Wash the apple and spring onions and give them a good shake to get rid of excess water.
Step 4
Remove the outer layer of the spring onion, top and bottom and then chop each one width ways into 1cm circles. Prepare the apple by first quartering, then cutting away the core and pips. Cut into 1cm cubes, keeping the peel on. Add these to the sauce you have made.
Step 5
Drain and rinse the tin of chickpeas well and add to the sauce along with the sultanas.
Step 6
Stir well into everything is coated with the sauce.
Step 7
Finally serve on a bed of lettuce or watercress leaves.
Step 8
Add a portion to a bread roll for a balanced meal
