Instructions

Step 1
🥔 First, boil the potatoes after peeling them. Depending on how small are the pieces you cut you will have to boil them more or less time. Or also, you could boil the whole potatoes without peeling them and then peeling them after boiling. The important fact here is that you should be able to easily stab the potato with a fork, for example, or a simple stick. Which means that the potato is done but not fully done. It doesn't matter if you cut the potato before or after boiling, I usually cut it into small pieces and the boil them. It takes me around 10 min in boiling water.
Step 2
🥔 Second, in a frying pan you can also have an onion with a but of oil. The onion is optional. You can start a civil war in Spain if you start arguing whether the true Spanish tortilla has or has not onions in it. I usually use a whole onion
Step 3
🥔 If you feel brave and you are not afraid that it will get burnt you can also put a bit of garlic (just a liiiitle bit, like two or three pieces. Lately I am using garlic powder because it is not good to find a big piece of garlic in a tortilla but it's good for the taste). If you are afraid like me you can do the garlic in the frying pan after taking out the onion
Step 4
🥔 Then, with the potatoes boiled and cut, you will add salt and black pepper, up to taste. Either you prefer more salt or pepper I would add it in a generous amount. Became potatoes without condiments dont have a lot of taste.
Step 5
🥔 Then I put them into the frying pan until they are well done.
Step 6
🥔 This is not what I mean as well-done but you still can make a tortilla out of it and it will be good

Step 7
🥔 This is well done but wait a few more minutes until the other parts of the potatoes are also brownish

Step 8
🥔 Then, mix all the ingredients in a bowl with batted eggs. Don't forget to put at least a pinch of salt in the eggs. Put the mix in a frying pan. Once you see it's done in one side, turn over the tortilla because the other side will still be raw
Step 9
🥔 If you have had your potatoes well done like the second photo you will have something like this

🥔 If you prefer not to do that much the potatoes, it will be like this

Step 11
🥔 Finally, you can eat them with "pan con tomate". You can cut the bread, spread tomato in it, put salt and oil and garlic if you want and then the tortilla
Step 12
🥔 Black pepper is also optional. For other variants you may put ham or/and cheese, but then don't put salt in the eggs and put less salt in the potatoes
