Ingredients

1 teaspooncoconut oil

3cardamom pods
cracked

0.5red onion
chopped

1clove garlic
crushed

1 teaspoonfresh ginger
grated

0.5red pepper
chopped

chicken breast
Palm size and thickness amount of, cubed

½ teaspoonturmeric

½ teaspoonground cumin

½ teaspoonground coriander

¼ teaspoonchilli powder

white pepper

1 heaped teaspoontomato purée

50mlwater

30gquinoa
dry weight or 90g quinoa cooked weight

0.5juice of lemon

Fresh coriander
chopped to garnish
Instructions
Step 1
In a pan heat the coconut oil on low to medium and add your cloves, cardamom, onion, garlic, ginger and chopped red pepper stir frying gently until your onions are soft, around 5 minutes.
Step 2
Add your cubed chicken, turmeric, cumin, coriander, chilli powder, white pepper, tomato purée and 50ml of water.
Step 3
Stir and then simmer for 15 minutes or until your chicken is cooked through.
Step 4
While your curry is simmering, prepare your quinoa as per the packet instruction.
Step 5
Now your chicken is ready, stir in the juice of half a lemon and present beautifully on your plate with the quinoa.
Step 6
Add chopped coriander to taste as a delicious garnish!
