Instructions

Step 1
Stir fry the chicken in a drizzle of olive oil until cooked through. Remove from pan.
Step 2
Return the frying pan to the heat and combine a drizzle of olive oil with ginger, broccoli, capsicum, snow peas, chilli and mushrooms. Stir fry for 3-5 mins
Step 3
Return cooked chicken to the pan and heat through.
Step 4
Divide between two bowls and garnish with coriander.
