1. Preheat the oven to 180°C or 360°F. Line a baking tray with baking paper.

2. Place the chopped vegetables on the prepared baking tray or roasting dish.

3. Drizzle olive oil over the vegetables and season generously with sea salt. Toss to combine.

4. Roast in oven for 35-40 minutes, until the veggies are golden and slightly caramelised.

5. Serve with fresh parsley, if desired.
