10Green cardamom
25Peppercorns
3 inchcinnamon
1 toil

Large, sliced and fried onion
½ tCaraway seeds

5cloves
2 Tginger garlic paste
1 Tred chilli powder
1 cyoghurt
2 Tcoriander leaves

2 Tmint leaves
ghee
Saffron
soaked in milk and water

Instructions
Step 1
Fry or use ready fried onions keep aside
Step 2
Cook rice with bay leaves and some cardamom, peppercorns, cinnamon and salt. Cool until firm
Step 3
Grind the seeds (caraway, cardamom, peppercorn, cinnamon and clove ). Also add dhana jeeru. (Can use woolies garam masala added )
Step 4
Take mutton/ or chicken and marinate with: ginger, garlic, salt , spice mix , red chilli powder, red masala, yoghurt, mint and coriander, crushed fried onions, lemon juice and 1T oil Keep aside for an hour or two.
Step 5
Heat ghee in a pan and sauté cardamom and cinnamon and add onions. Cook until soft
Step 6
Add marinated meat mix and cook on high. Then lower and simmer and cook until done. Add water.
Step 7
Place some ghee in a thick bottomed pan. Add half of rice.
Step 8
Add cooked chicken mixture and add torn mint leaves
Step 9
Add the rest of the rice and drizzle the saffron mixture over. And add remaining fried onions
Step 10
Cover and steam with a dum
