Quinoa and Black Bean Burritos

Ingredients
8 servings
1 tspvegetable oil
1onion
chopped
4cloves garlic
finely chopped
¾ cupquinoa
uncooked
1 ½ cupsvegetable broth
1 tspground cumin
¼ tspcayenne pepper
1 tspground pepper
1 tspsalt
1 cupfrozen corn
2cans black beans
drained and rinsed
½ cupfresh cilantro
Burrito
Instructions
Step 1
Heat the oil in a medium to large saucepan over medium heat. Stir in the onion and garlic and sauté until lightly browned
Step 2
Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring mixture to a boil. Cover, reduce heat, and simmer for 20 minutes
Step 3
Stir frozen corn and black beans and continue to simmer for about 5 minutes (until heated through). Top with cilantro and serve.
