Instructions
Step 1
Finely slice shallots and crush garlic.
Step 2
• Add glug of olive oil to pan and cook shallots until soft and translucent.
Step 3
• Cook gnocchi in a pan of salted boiling water.
Step 4
• Add garlic and chilli flakes to the shallots and, before the garlic starts to brown, add the tomato puree.
Step 5
• Cook the tomato puree mix until it starts to caramelise.
Step 6
• Add 75ml of starchy water from the gnocchi to the tomato puree mix. Keep adding until you get a thick and starchy sauce.
Step 7
• When the gnocchi is cooked (approximately 2 mins) add to the sauce and mix with a fork to ensure they don't stick together.
Step 8
• Add chopped basil, salt and pepper to the pan and stir through briefly.
Step 9
• Serve with leaf and topped with cheeze.
