Step 1
Toast the sourdough and leave to cool slightly. Mash the avocado with chopped fresh basil, chives and a little grated parmesan. Season well with salt, pepper, lemon zest and juice.
Step 2
Top with diced sun dried tomatoes, capers, slithers of parmesan and an extra scattering of lemon zest and chives.
