250g nuts (I used cashews + walnuts)
1 tbsp soy sauce
1 tbsp tahini
1 tbsp maple syrup
1 tbsp apple cider vinegar
1/2 lemon (juiced)
1 tsp garlic paste
Salt + pepper to taste
Salad ingredients:
1 red bell pepper, 1 grated carrot, 1/2 diced cucumber, 1/2 pomegranate, 1/2 avocado, 1 spring onion, handful fresh coriander, 200g rice noodles
