Instructions

Step 1
Preheat oven to 200 C fan
Step 2
Cut onion, peppers, aubergine and put in a dish
Step 3
Add 2 tablespoons oil and season with salt and pepper and oregano or other

Toss everything and bake for 25
Step 5
Turn the vegetables and bake for another 10
Step 6
Thinly slice the garlic and basil. Cut the halloumi into fair slices
Step 7
Add the garlic, basil, tomato, halloumi and 1 tablespoon of oil. Season more with pepper
Step 8
Bake for a final 15mins
