Tandoori Chicken Burger

Instructions

Step 1
Cut the chicken breast into two thin fillets.
Step 2
Use a meat mallet to tenderise the chicken. Tip, if you don't have a meat mallet at hand then a rolling pin will do. Canned food like beans or even an empty wine bottle will also work well but remember to use cling film over the chicken first!
Step 3
To make the marinade, add 2 tbsp of plain yoghurt in a bowl. Dairy free alternative will also work. Add the lime juice and 3 teaspoons of Punjabi Spice Blend. Mix thoroughly.
Step 4
Coat the chicken in the marinade and refrigerate for at least one hour.
Step 5
Heat a drizzle of oil in a griddle pan. When hot add the chicken and let it cook for approx. 6 minutes, turning frequently.
Step 6
Place a slice of cheese on the chicken steak and place aside.
Step 7
Lightly toast the brioche buns in the same pan
Step 8
Create your burger with a layer of lettuce, chicken, cheese and tomato and finish off with Lal Piaz chutney or your choice of burger sauce.
Step 9
Serve with home-made steak cut chips.
