3zucchini
medium, shredded and squeezed of excess moisture with a paper towel
3eggs
1 ½ cupmonk fruit sweetener
⅓ cuppure maple syrup
6 oz0% yogurt
2 teaspoonvanilla extract
2 Tbspvirgin coconut oil
melted and cooled
½ cupapple sauce

Instructions
Step 1
shred zucchini but don't loose any moisture
Step 2
mix all wet ingredients
Step 3
mix all dry ingredients in another bowl
Step 4
mix both bowls
Step 5
add the zucchini water
Step 6
bake at 350 for 35-50 minutes in a 10x10 pan.
Step 7
add a piece of aluminum on top after 15 minutes, and remove at end for a few more minutes
Step 8
add instant pudding on top (not in ingredients)
