Leftover Bread Fermented Paste
Koji, Sourdough liquid, bread leftovers and bakers yeast roasted.
Dry bread, sourdough and fresh yeast. mix with water and koji. Ferment for 4 months.
Savory dishes - pasta dressed with butter and this paste with fresh herbs.
Sweet Dishes - mascarpone cream w/ paste.
