Ingredients
6 servings
1 ½ cupsdried lentils
green or brown lentils sorted and rinsed
1 tablespoonolive oil
or 1/4 cup water
1onion
medium, finely chopped
3cloves garlic
minced
2stalks celery
chopped
1 teaspoonitalian seasoning
½ teaspoonground paprika
½ teaspooncumin
½ teaspoondried thyme
1 x 14 ouncescan diced tomatoes
1 tablespoontomato paste
optional
2carrots
medium, diced
1potato
medium, diced
6 cupsvegetable broth
1bay leaf
¼ teaspooncayenne pepper
salt
to taste
Instructions
Step 1
Heat oil or water in a large saucepan over medium heat. Add onions and cook for about 3 minutes. Add garlic and cook for another minute
Step 2
Add celery, Italian seasoning, paprika, cumin, thyme and cook for 30 seconds.
Step 3
Add lentils, tomatoes, tomato paste, carrots and potatoes, bay leaf and vegetable broth.
Step 4
Bring to boil, reduce heat to simmer for about 40 minutes or until stew has reached the desired texture.
Step 5
Remove bay leaf, season with salt and pepper and serve
