Burgers
¾ cupfresh bread crumbs
1 lbground chicken
¼ cupcilantro
chopped, optional
3scallions
thinly sliced
2 Tbspfresh ginger
minced
3cloves garlic
minced
1egg
3 Tbspsoy sauce
1 ½ Tbspdark brown sugar
1 Tbspsesame oil
1 Tbspchili paste
like sambal oelek
1 tspsalt
2onions
cut into thin slices
canola oil
for brushing
4 ringsfresh pineapple
or canned pineapple

Instructions
Step 1
1. In a large skillet over medium heat, heat butter or oil until shimmers. Add onions and cook until caramelized.
2. In a large bowl, gently combine the bread crumbs, chicken, cilantro, scallions, ginger, and garlic. 3. In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, chili paste, and salt. 4. Fold half of the wet mixture and the egg into the burger mix. Using your hands, for the mixture into four 1-inch thick burgers. Place burgers on a plate and chill for at least 30 minutes.
5. Preheat a grill or grill pan over medium high heat. 6. Grill the burgers and pineapple rings until the burgers form grill marks and are cooked about half way through, about 4 min. Flip the burgers and pineapple rings and grill until cooked through, another 3 to 4 min.
7. While the burgers are cooking, preheat the broiler. 8. If desired, slowly bring the remaining liquid mix from the burgers to a boil. Reduce heat and allow to simmer 5 min on low. 9. In a small bowl, combine the mayo and sriracha
10. Split the buns and put them on a baking sheet. Butter each bun half with about 2 tsp butter and sprinkle with coconut (optional). Broil until toasty, about 2 min
11. Serve burgers with pineapple, additional sauce, spicy mayo, caramelized onions, and lettuce.
