Instructions

Step 1
Peel floury potatoes then cook until fork tender . I like to steam mine so they absorb less water . Next let them air fry for a few minutes to get rid of some of the moisture then put on a bowl with 3 tbsp butter a good pinch of salt white pepper and a pinch of nutmeg and mash until smooth .

Step 2
Whisk three egg yolks then mix them into the potatoes . Use a piping bag with a star nozzle then fill with the potatoes and pipe on a parchment lined tray starting from the outside working to the inside and building height . If you don’t have a piping bag just spoon some potatoes then use a fork and just make some designs on them . Place the tray in the fridge until you are ready to bake .

Brush the potatoes with some melted butter Bake in a 200 c /392 f preheated oven for 20 minutes or until golden and enjoy
