Instructions
Step 1
loosely chop tomatoes, peppers, garlic and onion
Step 2
Roast the pepper, tomatoes, garlic and onion in the oven at 350 degrees fahrenheit or sauté
Step 3
Meanwhile, soak the cashews in boiling water for at least 15 minutes, drain when ready to use
Step 4
Now cook your pasta according to package instructions
Step 5
When steps 2 & 3 are done, combine all ingredients except the pasta into a blender and blend to create sauce, mix in with pasta, top with cheese and additional spices then serve. Bon appétit!
