Instructions
Step 1
CRACKERS: Preheat the oven to 320 degrees F (160 C) and combine the dry ingredients in a bowl, adding olive oil and water to create a mixture. Pour the mixture onto some baking paper, cover with a second piece of paper, and spread the mixture to be 0.5cm thick. Remove the top layer of paper and cook in the oven for 20-25 minutes. Allow the dish to cool down before breaking it apart by hand.
Step 2
CASHEW CREAM: Soak the cashews overnight. Drain and rinse. Blend until smooth. Set in the fridge for 1 hour before using.
Step 3
CARROT LOX: Use a vegetable peeler to create the carrot ribbons. Steam the ribbons for 3 minutes, and allow them to cool down for 10 minutes. In the meantime, prepare the marinade. Add the olive oil, smoked paprika, garlic powder, tamari, powdered nori, lemon juice, maple syrup, rice wine vinegar and capers brine to a container and stir well. Add the carrots to the container and make sure they are thoroughly coated. Leave in the fridge overnight to marinate.
Step 4
To a cracker, add a tablespoon of cashew cream, a rolled-up carrot ribbon, a dill sprig and 3 baby capers. Enjoy 🤍
