Instructions

Step 1
Slice sweet potato into strips and season with olive oil, soy sauce, almond milk and sesame seeds and roast in oven at 350 degrees for 40 minutes
Step 2
Bring 2 cups of water to a boil and add rice. Bring to a boil again and then let simmer on medium heat for 23 minutes.
Step 3
Put rice vinegar, sugar and salt in a small sauce pan and bring to a boil on medium heat. Stir until sugar is dissolved and remove from heat.
Step 4
Put rice in a plastic or glass bowl and add vinegar mixture stirring with a wooden or plastic spoon or paddle until cool.
Step 5
Lay nori sheet shiny side down and spread rice evenly leaving top 2 inches of sheet empty
Step 6
Slice avocado and lay that and sweet potato slices toward bottom middle of rice.
Step 7
Wet top of nori sheet with some water and roll sheet from the bottom up to the top. Roll it around a bit to get the sheet stuck together.
Step 8
Slice each roll into about 9 pieces each
