CHIPOTLE CAESAR SALAD

Ingredients
4 servings
⅓ cupalmonds
sliced or slivered
⅓ cupwater
hot
1chipotle in adobo sauce
seeded
¼ cupolive oil
2 tablespoonslime juice
1 teaspoonseasoned rice vinegar
1clove garlic
peeled
3 cupsromaine lettuce
chopped
3 cupskale leaves
chopped, ribs removed
salt
black pepper
½ cuppepitas
toasted, same as pumpkin seeds

Instructions
Step 1
1. Put the almonds in a glass with the hot water and let those suckas soak for about 15 minutes.
Step 2
2. When the almonds start feeling sorta soft, throw them in a food processor or blender with the water they soaked in, the chipotle pepper, olive oil, lime juice, vinegar, and garlic. Blend it all up until there are no more large almond pieces and it starts looking kinda creamy. Chill until you're ready to eat.
Step 3
3. Throw the romaine and kale in a large bowl and toss them together. Drizzle over some of the dressing, toss to coat, then taste to see if you need more. Add some salt and black pepper and the pepitas and toss again. Top with whatever you're going for. Serve right away.
