Fried Walleye with Fennel and Grapefruit Salad

Walleye (yellowfin pikeperch) is a unique Lake Superior freshwater fish that has frequently been appearing at Costco lately at a very reasonable price. My favorite cooking method for this fish is frying. I often serve it with a thinly sliced fennel and grapefruit salad — exquisite and perfect with fried fish.

Step 1
Portion walleye fillet into 6 oz cuts. Season them with salt and pepper. Make shallow incisions on the skin to prevent fillets from deforming during frying.
Step 2
Preheat the frying pan over medium heat with 4 tbsp of avocado oil. Place fillets skin down and cook basting the fish with hot oil until the skin is crispy and the fish is cooked.
Step 3
Remove the fish from the frying pan and pat it with a paper towel to remove extra oil. Place the fish skin up until ready to serve.

Peel onions and thinly slice. Place it in a bowl, season.
Step 5
Clean the fennel and thinly slice them using a mandolin. Reserve a few green leaves for plating.
Step 6
Cut tomatoes across and remove all the seeds. Julienne tomatoes.
Step 7
Zest the grapefruit, peel it, and cut supreme. Reserve the zest, juice, and slices.
Step 8
Wash, dry, and finely chop the herbs.
Step 9
Combine all ingredients except grapefruit slices in a bowl with onions, toss, and portion on the serving plates. Arrange fried fish on top of the salad, skin up, and grapefruit slices around it. Enjoy!
