Instructions
Step 1
Chop finely the white onion, and dice potatoes and mushroom into good sized pieces
Step 2
Sauté onion, garlic and ginger in instant pot for a few mins to soften.
Step 3
Add spices and sauté until fragrant
Step 4
Add potatoes, mushroom and lentils, add stock. Set pot to 7 mins at high pressure.
Step 5
Allow for a natural release for 15 mins then quick release the remaining pressure.
Step 6
Set pot to sauté and add noodles, spinach and coconut milk. Simmer until noodles are cooked through.
