Step 1
1. In a large pot, heat up the avocado oil (medium heat) and add in the onions. Cook for a few minutes then add the garlic and carrots. Cook for 5 more minutes, stirring occasionally
Step 2
2. Add in the tomato paste and stir. Add lentils, potatoes, and broth. Combine well.
Step 3
3. Add all the oregano, parsley, salt & pepper. Bring to a boil then reduce to low heat. Allow to cook for about 30 minutes or until potatoes are fork tender.
