Instructions
Marinade
Step 1
Slice the chicken into bite-sized chunks.
Step 2
Slice the chicken into bite-sized portions.
Marinade the chicken with the soy sauce, garlic powder, ground ginger, oyster sauce, onions, and hot sauce for several hours or overnight.
Rice
Step 3
Bring the water to a boil in a large pot and add salt.
Step 4
Add the long-grain rice and boil over medium heat for about 15 minutes.
Step 5
Drain the rice with a sieve, then rinse under cold running water.
Fried Rice

Add oil to a wok and heat at medium high heat. Once hot, add the chicken.

Lightly season with salt and pepper and sauté for about 6 minutes, or until golden brown. Then transfer chicken to a plate and set aside.

Add onions, garlic, ginger, peas, and carrots to wok and cook for about 3 minutes.

Add the rice and stir frequently for about 3 minutes, adding soy sauce, oyster sauce, and a dash of water to moisten the rice.

Beat the eggs thoroughly.
Step 11
Add the chicken back to the wok. Stir through well. Move everything to the sides of the wok and pour the eggs into the middle. Cook until the eggs set, stirring as they solidify.

Garnish with pepper flakes, hot sauce, and chopped spring onions.
