Instructions
Step 1
Cut potatoes in chunks and onion in 1/2.
Step 2
Place in a processor with the eggs. Process until pureed (about 20 to 30 seconds).
Step 3
Add remaining ingredients (except oil) and process a few seconds longer to blend into a smooth mixture.
Step 4
Pour oil to about 1/8 inch depth into a large skillet. When hot, drop in potato mixture by large spoonful's to form pancakes.
Step 5
Brown well on both sides. Drain well on paper towels.
Step 6
Top with sour cream and serve.
