2 Tbspsesame seeds
2 tspblack pepper
freshly ground
1 Tbsproasted sesame oil
1 Tbspcaster sugar
2 Tbspdijon mustard
1 Tbsplight soy sauce
2 Tbspdark soy sauce
2 Tbspgarlic
finely chopped
1 Tbspcoarse sea salt
500gminced lamb
1 tspfresh sage
chopped
6 Tbspsoy sauce
3 Tbsprice vinegar
1red chilli
slender, finely sliced
1spring onion
finely sliced
mint
or
coriander
lime wedges

Instructions
Step 1
1. Toast the sesame seeds in a dry frying pan until they turn golden brown and smell fragrant.
Step 2
2. Mix the seeds with the ground black pepper, sesame oil, sugar, mustard, soy sauces, garlic and salt. Add the mince and mix together well with clean hands, distributing all the ingredients.
Step 3
3. Separate the mixture into 12 even portions and press each portion onto a bamboo skewer, creating a sausage shape. You can cook these straightaway or chill them for up to 24 hours first.

4. Heat the oven to 220C/200C fan/gas mark 7.
Step 5
5. Lay the skewers on a baking tray and scatter with sage. Bake for 15-20 minutes until cooked through, turning them halfway with tongs. These can also be cooked on a barbecue or under a hot grill; turn them often.
Step 6
6. Mix the soy sauce, rice vinegar, chilli and spring onion to make a dipping sauce. Serve the skewers on a bed of fresh herbs, with lime wedges to squeeze over.
