cooked, BAP Free and or Tetra Paks salt-free drained and rinsed
2 cupscorn kernels
fresh or thawed frozen
¼ cupred onions
minced
1red pepper
small, seated and diced
1avocado
ripe, peeled pitted and diced
1jalapeno
small, seeded and minced, optional
½ cupfresh cilantro
chopped
Dressing
Instructions
For the salad
Step 1
In a large bowl combine the black-eyed peas corn onion bell pepper avocado and jalapeno and cilantro
For the dressing
Step 2
in a small blender combine the Tomato lemon juice pep Rica chili powder supercharged spice blend in black pepper
To Serve
Step 3
Pour the dressing over the salad and toss gently to coat sprinkle the sunflower seeds on top and serve
