One of the most popular Chinese street food during summer time we have back home in China. The taste is soft, garlicky, spicy and aromatic with subtle sweetness of the oyster itself, perfect to go with a bottle of beet in a summer day!

Step 1
Open oyster with a knife and glove, remove oyster meat from the shell and clean with water, place oyster back in the shell individually, place them on a big tray.
Step 2
Mix fresh minced garlic, diced Thai chili, oyster sauce, sugar, salt, light soy sauce, black pepper powder together in a big bowl, heat up cooking oil in a pan, once it gets extremely hot(with smoke), quickly pour hot water over the sauce, mix well.
Step 3
Place a tablespoon of garlic sauce on top of each oyster until it’s fully covered, place them in a baking tray and bake in oven at 360 °F for about 10 minutes. Remove oysters from oven and garnish with chopped scallion, serve warm immediately.
