2kgchicken leg pieces
Biryani Rice
4 LitresWater
2green chillies
12black pepper corn
1star anise
3black cardamom
3bay leaves
1 tspfennel seeds
1 piececinnamon stick
4green cardamom
1 tspcumin seeds
2 Tbspsalt
4 cupsbasmati rice

1 Tbsplemon juice
Masala
150mloil

Instructions
Chicken Tikka Marinade
Step 1
In a large bowl whisk together the ingredients and use it to marinade the chicken.
Step 2
Make small cuts in the chicken so that the masala can seep in

cover the chicken in the fridge for 2 hrs or overnight
Biryani Rice
Step 4
In a large pot bring 4-5 Litres of water to a simmer
Step 5
Add spices to the water
Step 6
Cover the pot and let boil
Step 7
Once the water is boiling, add in 4 cups of soaked basmati rice
Step 8
Spoon in lemon juice
Step 9
Cook the rice until it is 90% done
Step 10
Discard the large spices once rice has cooked
Step 11
Strain the rice and set aside
Cooking chicken
Step 12
Take out the chicken 2 hrs before preparation (if left overnight)

Fry the chicken for 10-12 minutes on medium to high heat
Masala

In a large pot heat 150 mL oil

add 4 medium sized chopped onions

saute well until golden brown

add spices to the onions
Step 18
saute for 2 more minutes

add 4 large chopped tomatoes

cover for 5 minutes until tomatoes are soft

add green chilies
Step 22
add remainder of spices (starting from turmeric) and saute well

add in yogurt, crispy fried onions, herbs and the remaining chicken tikka mariade mixture

use water to get all the excess marinade mixture from the bowl (around a 1/4 cup)

now add in the fried chicken and cook until it is tender
Assembling biryani

in a large pot add in a third of the rice

layer half the chicken and masala evenly

sprinkle in some herbs

repeat the process ending with a thin layer of rice at the top

add the remaining chicken tikka oil, sprinkle herbs and add some colouring

cover for 20-25 minutes on low heat

give a nice mix and enjoy!
